Cardamom Spiced Meatloaf
Servings: 8
2 tbsp butter
3 carrots, finely diced
1 large onion, finely diced
2 cloves garlic, crushed into a paste
2 tsp ground cardamom
1 tsp cumin
1/2 tsp cinnamon
1/4 tsp cayenne
1/4 tsp black pepper
1 lb ground chuck
1 lb ground lamb
2 eggs
1 cup fresh bread crumbs
1/2 cup Ketchup
1/3 cup plain yogurt
2 tsp salt
2 tbsp ketchup for topping loaves
+ Preheat oven to 375 degrees.
+ In 12 inch nonstick skillet, melt the butter over medium heat.
+ Add the carrots, onion and zucchini
+ cook, stirring occasionally,
+ when until the vegetables are tender (~15 min).
+ Add garlic and cook 1 minute
+ Stir in cardamom, cumin, cinnamon, peppers
+ cook 30 seconds.
+ Set aside to cool slightly.
+ Mix all except 2 tbsp ketchup just until well blended but not over mixed.
+ Shape into meatloaf in baking dish
+ spread the top with the remaining ketchup.
+ Bake 1 hour 15 min.
+ Let rest 10 minutes
