Chipotle Shrimp ***
makes 2 servings
1 tablespoon olive oil
1 garlic clove, minced
1 (14.5-ounce) can fire-roasted diced tomatoes
1 canned chipotle chile in adobo sauce, minced (see note)
2 teaspoons canned chipotle chile sauce
1/2 cup chicken broth
8 ounces peeled and deveined medium-large raw shrimp
Salt and Pepper
1 tablespoon minced cilantro
1 cup cooked rice

+ Heat olive oil in large skillet.
+ Add garlic and cook over medium-high heat for 20 seconds.
+ Stir in tomatoes with liquid, chile and chile sauce.
+ Reduce heat to low and simmer for 5 minutes to thicken slightly.
+ Add chicken broth and shrimp.
+ Simmer for 5 minutes or until shrimp are cooked.
+ Season to taste with salt and pepper, and sprinkle with cilantro.
+ Serve over rice.
