Classic Caesar ****
Servings: 2-6
2-3 cups croutons
Dressing:
1/4 cup lemon juice
1/2 cup olive oil
4 cloves garlic, crushed
2 anchovy fillet, or 2 tsp anchovy paste
1 tsp Dijon mustard
Kosher salt
Freshly ground black pepper
Salad:
1 Romaine lettuce, torn into bite-size pieces or a 10 oz bag Romaine
2 5 oz tins of Anchovy fillets (optional)
2 oz shreded Parmesan & Romano cheese, shredded
+ Whisk together lemon juice, garlic, anchovy fillets, Dijon mustard, salt and freshly ground black pepper.
+ Gradually whisk in olive oil.
+ Pour dressing over lettuce and toss to coat.
+ Add anchovies, Parmesan cheese and croutons.
