Falafel Pitas ***
Servings: 2-5
1 box dry falafel mix (7 oz/1 cup)
3/4 cup water
2 tomatoes, diced
8 leaves green leaf letuce
5 pita halvs (3 whole pitas)
4 cups peanut oil
cheese (provolone, goat or mozzarella are best)
Tzatziki Sauce:
2 cups plain yogurt
1 medium cucumber (skinned, deseeded, shreded, and squeezed)
2 cloves garlic, minced
ground pepper
+ a few hours or a day ahead of time mix up the falafel and the water in a bowl
+ take some plastic wrap and apply it to the top of mix (not the top of the bowl)
+ place in fridge for at east two hours or over night
+ for the sauce mix yogurt, cucumber, garlic and pepper, put in fridge
+ heat oil to 380f, (don't fake it, measure it)
+ scoop falafel mix into heaped tablespoon size nuggets
+ fry in oil for 1-2 minutes till golden brown on outside, rotate half way through cooking
+ drain them on paper towel
+ ply your pita with tzatziki, vedges, cheese
+ lightly smash (just to flatten a touch) falafel and put two to three nuggets in the pita
+ serve
! this dish happens to be vegetarian but is tasty
