Feta Potato Cakes

Servings: 4
1 1/4 lb potatos
4 oz feta, crumbled
4 scallions, chopped
3 tbsp chopped fresh dill
1 egg, beaten
1 tbsp lemon juice
s&p
flour for dredging
3 tbsp ollive oil
# boil potatoes in lightly salted water until soft
# drain
# peal potatoes while they are still hot.
# place in a bowl and mash
# crumble the feta cheese into the bowl
# add scallions, dill, egg, lemon
# and carefully add s&p. Feta is already salty
# stir
# cover and chill till firm
# form small patties (about walnut sized)
# dredge in flour
# heaat oil in pan
# pan fry cakes till golden brown on each side
# drain on paper towels, serve
