Galician Broth ***
From: Medeterranean pg 58
1/2 lb smoked ham in 1 piece
1 bay leaf
1 onion, sliced
1 tsp paprika
3/4 pound potatoes, large chunks
1/4 pound collard greens
7 oz can navy beans, drained
s&p

# soak ham overnight in cold water
# drain and move it to large saucepan
# add bay leaf, onion & 3 cup cold water
# bring to boil
# simmer until meat tender (45 min)
# remove meat from broth & place on cutting board
! From this point forward maintaining a simmer is the key. Adjust heat as needed.
# trim pork and then chop into small chunks
# return meat to liquid an add potatoes and paprika
# cover, simmer 20 min
# devain greens and roll the leaves up
# cut rolls in thin shreds
# add shreded greens and beans to # simmer for 10 min
# s&p
# serve
