Goat Stew ***
Servings: 3
tortillas
1 lb goat with bones
4 cups water
1/2 onion
3 garlic cloves chopped
1 jalapeno pepper, chopped*
1 poblano pepper, chopped
1/2 cup hot water
1 fresh bay leaves
3 sprigs thyme
1/2 tbsp ground cumin
1/2 tbsp oregano

Sauce:
1/4 cup red wine vinegar
1 garlic clove
1/2 tsp cyenne
Garnish:
1/4 cup diced onion
1 limes, cut into wedges
1/4 cup chopped cilantro
+ In a soup pot, add the goat, water, onion, and garlic cloves.
+ Bring to boil and cook for 1 hour, coverd..
+ add water as needed to maintain water level
+ in a hot pan toast the peppers.
+ submerge in hot water for 20 minutes
+ remove from water and puree in blender with a cup of warm water with garlic, vinegar, and cyenne
+ after cooking goat for the hour add the bay leaves, thyme, chile puree, cumin, oregano, salt, and pepper
+ simmer for 30 minutes
+ Serve stew in a big bowl with garnish and squeez of lime
+ Serve with tortillas
* cut in half and pick how hot you want it.
