Hearty Mushroom Sauce ***
Serves 8
Prep time: 10mins
Cook time: 8mins
4 tbsp. Olive oil
1 1/2 lb. mushrooms, cleaned and sliced
1/4 cup chicken stock
2 cloves garlic, minced
2 tbsp. finely chopped parsley
1/4 cup heavy cream
1. Heat olive oil in large frying pan over medium heat. Add mushrooms
and saute, stirring occasionally, until golden brown and tender.
2. Add chicken stock, garlic, parsley and cream. Simmer 3 to 4 minutes
until the mixture has thickened and is reduced by half.
3. Season with salt and pepper and garnish with extra parsley if desired. Green pepper will work better than black.
