Jumbo Shrimp Casserole ****
Servings: 2
6 Jumbo Shrimp (1/2 lb, peeled, deveined, butterflied
1/2 cup heavy cream
1 egg yolk
1 tbsp butter
1/4 cup onion, fine chopped
1/4 cup quartered cremini* mushrooms
s&p
1/4 cup dry white wine
1/2 tbsp chopped parsley
+ preheat broiler
+ in large bowl whisk cream and yolk.
+ heat a skillet to medium heat
+ melt butter in skillet
+ saute onion till soft and turning clear
+ add shrimp and mushrooms
+ cook for another 3 min (flip shrimp midway)
+ s&p
+ deglaze with wine
+ cook until liquid has evaporated
+ remove shrimp and set aside
+ whisk cream & egg mixture into skillet
+ cook until thick and creamy (2-5 min)
+ add chopped parsley
+ transfer mixture to ovenproof casserole dish
+ add shrimp on top
+ broil for 3 min
* anything not white will do
