Kale, Sausage and Potato Soup ***
Serves 2
4 oz kale, stems removed
2 spicy italian sausages
1 lb potatoes
8 cups vegetable stock
1/2 tsp ground black pepper
pinch (1/8 tsp) cayenne pepper (optional)
one box corn bread (made to package directions)
salt and ground black pepper

+ chop kale so that no bit is larger than 1 inch
+ prick the sausages and place in a pan with enough water to cover.
+ simmer for 15 minutes.
+ drain and cut into thin slices.
+ chop potatoe and boil till fork tender
+ drain and place in a bowl,
+ roughly mash potatoes, adding a little
of the cooking liquid from sausage to form a chunky thick paste.
+ bring the vegetable stock to the boil
+ add the kale, sausage
+ simmer for 5 minutes.
+ add the potato paste
+ simmer for 20 minutes.
+ season with black pepper and cayenne.
+ serve, generously sprinkled with pepper.
