Labdhara Gosht ****
Servings: 2-3 small, make with rice
1 lb boneless lamb, pork or beef, cut into 1-inch cubes
1 small onion, finely chopped
1 inch of fresh ginger, skinned, finely chopped
1 tomato, finely chopped (or 1 tbsp tomato paste)
1/2 cup cilantro, chopped
1 jalapeno, sliced, don't deseed
1/2 tsp ground turmeric
2 tsp garam masala
1 tsp ground cumin
1/4 cup plain yogurt
1 tbsp tomato paste (or 1 more if not using above tomato)
3/4 tsp salt
3 tbsp vegetable oil
4 cloves garlic, skinned, finely chopped
black pepper
+ mix everything except oil garlic and black pepper in bowl
+ heat oil in sauce pan over medium heat
+ add garlic
+ when it starts to brown add mixture
+ stir
+ add 1/2 cup water
+ tightly cover with lid, helps if you put layer of foil between lid and pan
+ reduce heat to medium-low,
+ cook pork or lamb for 45 minutes, beef for 1 hour
+ increase heat to high and stir until liquid reduces completely and meat browns
+ add black pepper
