Matar Makhani ****
Servings: 2-3
1/8 heaped tsp sugar
1/4 heaped tsp ground cumin
1/4 heaped tsp garam masala
1/4 heaped tsp salt
1/8 heaped tsp cayenne
2 tsp tomato paste
1/2 cup whipping cream
1/2 tbsp lemon juice
1 tbsp cilantro, chopped
1 small fresh jalapeno, finely sliced, do not deseed
2 tbsp vegetable oil
1/4 tsp cumin seeds
1/4 tsp mustard seeds (black or yellow)
1 15 oz can early young peas, drained, (look for sliver can)
+ combine sugar, ground cumin, garam masala, salt, cayenne and tomato paste
+ slowly mix in 2 tbsp water
+ slowly mix in cream
+ set aside
+ heat oil in sauce pan to medium-high
+ add lemon juice, cilantro and jalapeno to cream mixture
+ when oil is hot add cumin and mustard seeds
+ when mustard seeds start popping add peas
+ gently but throughly mix peas into oil and seeds till heated (doesn't take long)
+ add cream sauce
+ change heat to high
+ gently but throughly mix for 2 minutes
+ serve hot
