Mushroom & Pumpernickel Stuffing ***
Accidentally ate it all before taking picture.
Servings: 4 (enough for four 1 lb game hens)
2 cups wild mushrooms (chanterelles, porcinis, creminis, portabella, etc.) chopped.
4 tablespoons (1/2 stick) unsalted butter, melted
1 shallot or 1/4 onion, chopped
1 leek (white portion only unless you need a little more), chopped
2 slices pumpernickel bread, toasted and cut into 1/2-inch cubes
1 cup chicken broth
2 teaspoons poultry seasoning (McCormicks Grill Mates Montreal Chicken)
Salt and freshly milled black pepper

+ mix all in bowl
+ cook on stove or stuff into bird and cook bird
