Paprika Chicken and Dumplings ****
1 chicken
1 large (2 meduim) white onion, chopped
2 tbsp paprika (1/2 tbsp per pound of bird)
s&p
1/2 tbsp of cake flour
Dumplings:
1 cup flour
1/2+ cup milk
1 egg
+ break down the chicken
+ trim any excess fat from chicken and reserve.
+ heat large skillet to meduim
+ add fat in skillet
+ add paprika, salt, pepper, cake flour to chicken and mix in bowl
+ once there is layer of fat in skillet
+ add onions to skillet
+ add chicken skin side down to skillet
+ cook 10+ minutes till skin crispy
+ turn chicken over
+ cook another 10 minutes covered
+ add just enough water to make it half way up the side of chicken parts.
+ simmer
+ boil 6 cups water in stock pan, salt the water, reduce to simmer
+ mix dumpling components till you get a batter consistancy.
+ bring chicken to boil
+ mix 2 tbsp to flour 3-4 ounces water
+ slowly add small amounts of above mixture till you get desired thickness of sauce
+ spoon or fork small ~(1 tbsp) dollops of dumplong mix into simmering water.
+ when the dumplings float up the are done
+ as each dumpling finishes add it to the skillet
+ serve
