Pork Chili Soup ****
Servings: 4
1 tsp olive oil
1+ lb ground pork
s&p
1 onion, thinely chopped
1 leek, finelly chopped (white and light green parts only)
1 can green finely chopped chili, or one roasted green chili,
2-3 garlic coves, finely chopped
14 oz
(1 can) chopped tomatoes with juice
3 tbsp tomato paste
2 cups chicken or meat stock
1/4 tsp ground coriander
1/4 tsp ground cumin
1/2 tsp ground oregano
2 tsp chili powder
1/4 tsp cyenne pepper
cilantro, chopped for garnish
sour cream for garnish
+ With sauce pan at medium high to heat oil
+ add pork and s&p
+ brown pork
+ reduce heat o medium
+ add onion, leeks, chili and garlic.
+ Cover and cook for 5 minutes till onion is soft, stir occasionally
+ add tomatoes, paste, stock, coriander, cumin, oregano, chili powder.
+ stire and mix well
+ bring to a boil
+ reduce heat to low
+ cover and simmer for 30-40 minuts till vegies are very tender
+ taste and add seasoning as wanted
