Pork Medallions With Sauteed Apples and Beans ***
Servings: 2
1/2 lb pork tenderloin
1/2 tsp dried thyme
1/2 tsp paprika
1/8 tsp salt
1/8 tsp peper
1 sliced green onion
1/2 garlic clove, minced
1/2 tbsp butter
1 medium red apple, cut into wedges
1 tsp cornstarch
1/3 cup chicken broth
1/8 cup unsweetend apple juice
1/2 lb fresh green beans, trimmed
1 tbsp butter
s&p
1/2 tsp dried savory


Pork:
+ turn on broiler
+ cut pork into 1/4 inch thick slices
+ combine thyme, paprika, s&p in mixing bowl
+ mix pork and spices in bowl
+ broil pork on foil lined cooky sheet 4 inchs from broiler element for 4 min
+ remove from heat and keep warm

Apples:
+ in nonstick skillet saute onions and garlic in butter
+ when tender add appls
+ cook and stir for 2 min until apples are crisp-tender.
+ combine cornstrch, broth and apple juice
+ stir until smooth
+ stir into apple mixture
+ bring to boil and stir for 2 min until sauce thickens

Beans:
+ melt butter
+ mix butter and beans
+ mix in savory and s&p
+ microwave for 5-6 minutes
