Potato Leak Soup ***
Servings: 2 (3 cups each)
1 large white potatoe, diced
1 large leak, washed well and thinly sliced. Finely chop the green parts.
2-3 c. chicken broth or stock
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. heavy cream or 1/2 & 1/2
dash grated nutmeg
2 thick slices bacon
+ In a large pot, combine the potatoes, leaks and s&p.
+ add chicken broth, enough to cover contents of pot.
+ Bring to a boil.
+ Reduce heat to low
+ cover and simmer 15-20 minutes or until the vegetables are tender.
+ cook bacon until crisp
+ Strain the soup into a large mixing bowl or another pan.
+ chop bacon
+ Blend the potatoes and leaks with about 1/4 broth until smooth
+ Return blended mixture to pan with remaining liquid.
+ Stir in cream, bacon and nutmeg and heat through.
+ optional: Sprinkle with a little shreded cheese.
+ serve with crusty bread.
