Potato and Roasted Garlic Broth ***
1 whole head of garlic
1/2+ lb diced potato
3 cups good stock (vegetable, beef, or chicken)
+ Preheat oven to 375
+ put garlic (pointy end up) onto foil covered baking sheet
+ bake for 30 min
+ simmer stock
+ boil/parboil potatoes in heavily salted water for ~10 min
+ drain potatoes
+ add potatoes to stock
+ take a few of the garlic cloves from the had and set them aside
+ squeeze the rest of the garlic into the soup
+ simmer for 15 minutes
+ add the reserved garlic cloves
