Saffron Aioli ***
Servings: 4
1 egg yolk
1 1/2 cups extra virgen olive oil.
1/2 tsp dijon mustard
1-2 tbsp lemon juice
1 garllic clove, crushed
1/2 tsp saffron strands
s&p
(1) Make Aioli (mayo)
# add yolk, mustard & pinch of salt in mixing bowl
# beat with wooden spoon.
# still beating add in evvo slowly
# add lemon juice and s&p
# beat in garlic
(2)
# add saffron and 2 tsp hot water in a bowl
# press saffron w/ back of a spoon and bleed it into water.
# let sit 5 min
# beat into aioli mixutre until a mayo consistancy developes
