Sage Roasted Chicken **
(this took twice as long to cook as the directions indicat)
1 whole chicken, 4 lb
5 sprig fresh sage
2 tbsp extra virgin olive oil
s&p
1/4 red onion chopped
1/2 lemon, wedged
+ preheat oven to 400
+ carefully lift skin and evenly space 4 sage leaves over each breast
+ rub whole bird with olive oil and s&p
+ stuff bird with red onion, and lemon and remaining sage
+ place bird on roasting rack inside of pan.
+ roast in oven till skin is crispy (about 20 min)
+ lower oven temp to 350
+ roast until internal temp is 165 (about 20 min)
+ if skin is getting overly done then cover with foil while cooking continues
+ remove from oven
+ let bird rest
+ remove sage, onion, lemon from cavity before carving bird
