Shrimp & Tomatoes ****
2 servings
1 tbsp olive oil
3/4 lb peeled shrimp (no tails)
1 1/2 - 4 garlic cloves, minced
pinch red pepper flakes
3 cubed plum tomatoes
1 tbsp chopped parsley
1 tbsp lemon juice
1/4 lb pasta
bread & butter
# coat & heat skillet /w 2 tsp oil
# s&p the shrimp & cook in skillet
# move shrimp to plate
# change heat to medium
# add garlic & red pepper & tomatoes
# cook 10 min & season w/salt
# add back shrimp & any juices
# toss in parsley & lemon juice
