Skillet Lamb Á La Grecque **
Servings: 4
1 lb ground lamb
1/4 cup chopped onion
1 minced garlic clove
4 cups chopped eggplant
7 oz spaghetti sauce
1 tsp salt
pinch pepper
1/2 tsp basil
3 oz mozzarella cheese sliced
olives
+ form large patty of lamb
+ brown lamb
+ chunk lamb and push to sides of pan
+ in drippings saute onions & garlic
+ stir in eggplant, sauce, s&p, basil
+ cover, boil, simmer 20 till eggplant is tender
+ lattice cheese on top of mixture
+ place olives in gaps of lattice
+ cover till cheese melts
