Spicey Tomato and Cilantro Soup ***
Servings: 3 (3 cups each)
1 1/2 lb tomatoes
2 tbsp veg oil
1 bay leaf
4 scallions, chopped
1 tsp salt
1/2 tsp crushed garlic
1 tsp fresh black peper
2 tbsp fresh cilantro, chopped
3 cups water
1 tbsp cornstarch
garnish: 2 tbsp light cream
+ one at a time plung tomatoes into very hot water and remove them quickly, peal
+ roughly chop tomatoes
+ in saucepan heat oil
+ add tomatoes, bay leaf and scallions
+ fry till soft and translucent (do not brown)
+ add salt, garlic, peper, cilantro
+ add water
+ boil
+ lower heat and simmer 15 to 20 min
+ dissolve cornstarch in a little cold water
+ remoe soup from heat
+ press soup through a strainer placed over a bowl
+ discard strained vegies
+ return soup to pan
+ ad cornstarch mixture
+ stir over low heat till thick (3 min)
+ serve with garnish
