Stroganoff **
Serves: 6
1 1/2 pounds boneless
3 shallots, chopped.
1 2/3 cup sour cream
4 tbsp butter, divided
2 tbsp sherry or brandy
+ preheat oven 375°f
+ slice sirloin into 1/4 inch thick slices
+ stir-fry meat in 1/4 of butter till very rare
+ add sherry & butter
+ deglaze pan & cook shallots tilt transparent
+ stir in sour cream till creamy
+ bake (in oven safe dish) for 10 min
Notes: A sweet flavored stroganoff that can not be doctored without a total rewrite.
The first time I made it it was served with whole wheat toast to cut the sweetness and hard cidar to blend with the sweetness.
