Tangy Roast Beef Sandwiches **
Servings: 3
1 lb boneless beef chuck roast
1 cup water
1/4 cup chopped onion
1 tbsp butter
1/3 cup ketchup*
3 tbsp lemon juice
1 tbsp brown sugar
2 tsp red wine vinegar
1 1/2 tsp Worcestershire
1/8 tsp salt
1/8 tsp pepper
3 sub/hoagie buns
+ place roast in slow cooker with water
+ cover and cook for 3 hours on high
+ shred meat with two forks and return it to slow cooker
+ in small skillet melt butter
+ saute onion
+ stir in ketchup, lemon juice, brown sugar, vinegar, Worcestershire, salt and pepper
+ mix back into slow cooker
+ cook on low for 2-3 hours (or 1 1/2 hours like I did)
+ preheat oven to 400
+ slit hoagies and place open side down in oven for 5 minutes
+ serve meat on bread
Tasty but not worth 5-6 hours unless you are doing a double batch.
* I don't stock ketchup** so I used just shy of 1/3 cup tomato paste and added a tbsp of red wine vinegar)
** no seriously, I don't use the stuff, this is the first thing in 5 years that I made that requested it.
