Taquitos, Beef ****
5 pounds roast
10 cloves garlic, minced
1 large onion, chopped
50 corn tortillas
+ Cook roast in slow cooker with onion and spices and enough water to cover for 4 hours.
+ Finely shred/chop roast beef and let it cool,
+ drain off excess water
+ soften tortillas in microwave or steamer or hot oil
+ Take 1/4 cup of meat and place on lower part of tortilla.
+ roll up tortilla
+ place taquito on butcher paper covered cooky sheet
+ if they won't stay wrapped then stick a toothpick in them
+ let cool or freeze
+ stick them in freezer bag

+ When ready to eat them cook them up in hot oil or bake for 15-20 minutes at 325f
+ top with all the tasty things in life: chease, guac, salsa --
