Tuscan Pork Roast ***
servings: 2
2 cloves garlic, minced
1 tbsp olive oil
1/2 tbsp fennel see, crushed
1/2 tbsp dried rosemary, crushed
1/2 tsp salt
1/8 tbsp pepper
8 oz pork tenderloin (half a one ponder)
+ in small bowl mix all but pork
+ rub pork with mix
+ chill overnight (optional)
+ roast on rack in roasting pan at 350 for 45 min
+ baste it at 20 and at 30 minutes
+ lat stand 5 min before slicing.
