Zeera Aloo ****
Servings: 2
1 large baking potato
3/4 tsp salt
2 1/2 tbsp vegetable oil (you will need more)
1 tsp cumin seeds
1 tsp ground cumin
1/2 tsp garam masala
1/8 tsp cayenne pepper
3 tbsp cilantro, chopped
+ scrub and skin potatoes
+ put in pot and add enough water to throughly cover
+ gently boil till just barely fork tender
+ drain water
+ in a sauce pan heat oil to medium-high (but not smoking)
+ add cumin seeds
+ after about 20 seconds gently add potatoes
+ once that side is golden and crispy add more oil and rotate
+ repeat till all sides are golden and crispy
+ mix tsp salt, ground cumin, garam masala, cayenne in bowl
+ while potatoes are still on the heat coat all sides of potatoes with spice mix
+ remove from heat
+ top with cilantro
+ serve
